Burger Mix
1 pound ground sirloin
4 tbsp butter, diced in small cubes, the smaller the better
1 tsp worcestershire
Salt and Pepper
In a large bowl combine all ingredients and flake it with a fork until the butter is dispersed evenly. Loosely pack 4-6 patties. I tried to have one side where no butter was showing at all. My logic behind this is that this will be the side you cook first so instead of the butter just running out of it, it will melt into the meat longer, keeping it moist. Whether that actually works that way or not, it at least makes sense in my head. Which makes me feel better. After I formed the patties I let them sit in the fridge for a little while uncovered. Bottom shelf, always for raw food. No nasty drips contaminating the rest of your food!! So the reason uncovered sounds gross when you explain it but it's the same reasoning as starting with a dry dry dry chicken skin before oven roasting. The outer layer of the burger forms a drier skin and it gets nice and crisp when you grill it. When you're ready to cook allow them to come to room temp for about 30 minutes. I seasoned mine with Cavender's Greek Seasoning, but you can use your favorite standby seasoned salt mix. Then toss them, solid no butter side down, onto a hot grill or skillet. Cook about 3-4 minutes per side. Then if desired brush with A1 or Bbq sauce. Melt some Sharp Cheddah on top and WahLAH!
French Fries
3 medium potatoes, cut into shoestring fries
Salt and Pepper
Toss dry fry into preheated deep fryer (375F) Cook until golden brown and crisp
Sauteed Onions
2 onions sliced thinly
2 Tbsp Butter
Salt to Taste
In a cast iron skillet over medium heat melt 1/2 butter toss in onions, and sprinkle with salt. About half way through when onions have started carmelzing add the rest of the butter and cook to your desired doneness. I take mine all the way to almost a jam. Remove to a bowl
In the onion pan toast some buttered ciabatta buns instead of regular ham burger buns. They make all the difference!
And just because it is delicious, Grilled Pineapple! Throw it right on there with the burgers.
